The Concept

Simplon
is all
about
one thing.

New York style pizza, made without shortcuts.

48 hours of fermentation.
San Marzano tomatoes.
Fior di latte.
Slow fired.

Not a restaurant concept.
A place.
The kind a neighbourhood builds its week around.

How we make it.

The
Pizza

Four things.
Done obsessively.
Every single time.

Pizza and craft drinks at the blue Simplon table
01
The Dough

48
hours.

Nothing less.

Tipo 00. Cold fermentation. A Biga that starts 24 hours before the main mix.

The dough rests while the kitchen sleeps — and it shows in every bite.

Tipo 00 Cold fermentation Natural leavening
02
The Tomatoes

San
Marzano.

No shortcuts.

Cold-crushed by hand. No added sugar. No seasoning before assembly.

The tomato speaks for itself.

Restraint
is a
skill.

Fior di latte. Applied with intention.

Enough to melt into the sauce. Never enough to hide it.

The Pizza

Slow
fired.

Every topping added exactly when it belongs.

The right heat. The right time. Nothing rushed.

Looks effortless. Isn't.

The Story

Born in a
neighbourhood.
Built for
the world.

Simplon Studio opened in Mannheim's Jungbusch in 2024. A family business — every member of the family involved, every detail considered.

Not a restaurant concept. A place. Meeting point. Destination. Local obsession.

Our mission sounds simple and isn't: to bring New York pizza culture somewhere new. The real version — not the one most people grew up with, the chains and the plastic cheese and the shortcut dough. We're talking about what happened when Italian immigrants landed in New York with none of the tools they knew. No wood-fired ovens. No Tipo 00. No Campanian fior di latte. They had coal ovens that ran cooler. They had what the market offered. And they adapted. Over generations they created something entirely their own — longer fermentation, softer cheese, a slice that folds. What began as necessity became the richest pizza culture in the world.

It began in a flat. Simplonstraße, Berlin. Two people, one kitchen, and an idea that got louder every time we ate bad pizza. The dough was always 48 hours. The tomatoes were always San Marzano. The standard was never negotiable.

And it never stops. The pizza you'll eat here tonight is not the same as the one you would have eaten a year ago. We are always looking for a better dough — a small improvement most people won't notice but we will. There is no perfect pizza. That's exactly why we keep making it.
